Ice Riesling, Black Sea Coast, Bulgaria, 2020, 13% 375ML

A small bottle but not a wine you need a lot due to its intensity. This is a dessert wine, on the sweeter side but not sickly sweet, nicely balanced. The ice wine process is a fascinating one - the grapes are left to freeze on the vines, and then re-frozen after picking. The technique allows the winemaker to extract a lot of water, leaving you with the pure concentration of the grape juice, in this instance Riesling. Gorgeous rich cooked fruits, honey, and flowers. Lots of acidity keep the wine fresh.
