TFWATH Palomino 2022 11.5%

Made over in Jerez, Spain, by Crystal Palace Market's very own Darren from The Finest Wines Available to Humanity, this is a incredibly complex, fascinating wine, and one of our favourite discoveries of 2023. Made from the Palomino grape, usually used for sherry, this is unfortified. Instead, Darren and co used organic grapes, left on skins for 10 days to create essentially an orange wine. The wine was then aged for 7 months in a 700l chestnut amontillado cask under a 'flor', the method for making sherry, giving it a ton of delicious nuttiness. Unfined and unfiltered, with very little sulphur. Spicy, salty, soft, complex and ever-evolving - this is special and delicious. 

Pairing: it's a fascinating wine to pair. It definitely works brilliantly with gordal olives and almonds, but we think it has a lot of meal potential too.
